Mum…. Whats for Dinner?

I dont know about you… but Tiana now 7 keeps wanting to know   “mum… whats for dinner?”   Before now it never really worried her… she just ate  whatever was given.

Now… she wants “this” or “that” and that scrunched up her nose now and again when she thinks I am not looking!    ahhhh Kids.  ( I hate to admit it….   I was exactly the same)

She actually does like this recipe though….  and its easy too.  I add extra corn to us adults after I have dished it up.  For some reason she really dislikes corn… and I just love it!!!

Tuna spinach mornay pie with mash

Serving size: Serves 4

Cooking time: Less than 60 minutes

INGREDIENTS
50g butter
1 medium brown onion (150g), sliced thinly
¼ cup (35g) plain flour
2 cups (500ml) milk, warmed
150g baby spinach leaves
425g can tuna in springwater, drained
2 tablespoons lemon juice

potato and celeriac mash
400g potatoes, chopped coarsely
300g celeriac, chopped coarsely
2 tablespoons milk
30g butter
¼ cup (20g) finely grated parmesan cheese

METHOD

Make potato and celeriac mash.

Melt butter in medium saucepan; cook onion, stirring, about 5 minutes or until softened. Add flour; cook, stirring, until mixture thickens and bubbles. Gradually add milk; stir until mixture boils and thickens. Remove from heat; stir in spinach, tuna and juice.

Preheat grill.

Spoon tuna mixture into shallow flameproof 1.5-litre (6-cup) dish; top with mash. Grill until browned lightly.

Potato and celeriac mash

Boil, steam or microwave potato and celeriac, separately, until tender; drain.

Combine potato and celeriac in large bowl; mash with milk and butter until smooth. Stir in cheese; cover to keep warm.

Planning a car trip in School Holidays

 Featured Business

Planning is such an important part of travelling. I am a real planner and here are some helpful car travel tips that will help you get out the door for your car trip with the kids:

* During children’s sleep/nap times this is a great way to pass more time in the car without you having to hear the dreaded words “are we there yet?”

* Around traffic - keep in mind Friday night traffic, long weekend traffic etc. If you can’t leave work early on a weeknight, go after dinner when the kids are bathed and ready for sleep in the car. Before heading off, check out up to date traffic alerts from your local roads authority. These sites are great for highlighting road works, traffic accidents, time taken on freeways, cameras etc.

 * Search in advance for playgrounds to stop at, toilets, rest stops etc. Fast food restaurants with playgrounds are also a great option to stop at, as they have playgrounds, refreshments and toilets all in one (especially if its raining)!

* Remember to get your car serviced a few weeks before your car trip.

* Check that your road side assistance membership is current and that you have your card with you (just incase).

* Can you break your journey up by staying overnight at a B&B? This is a great way to break the journey up and to start your holiday early rather than driving for 10 hours straight!  Research what is available around the area for you to do:

- interesting museums to take the kids to e.g. transport museums etc

- little scenic towns to visit for lunch or to shop at

- maybe something adventurous like sky diving, taking a hot air balloon trip, rafting etc.

KooL KidZ ~ Amelia

Published by Elizabeth under Kids and Fashion, KooL KidZ

well the best way to get the most nutrients into my Amelia is my mum’s special soup.
Basically you buy THE BEST chicken drumsticks you can get, (organic ones - the better the drumstick the better the soup)
Slowly bring the drumsticks to boil in some water in a pot.
Add a pinch of salt
As the soup boils along add some chopped up veggies
potato
sweet potato (essential)
celery (essential)
tomato
carrot
zucchini
broccoli… anything else you like
let these come to a slow boil
The soup will absorb all the goodies from the drumsticks and the veggies
The final addition is some noodles.
Once the chicken is falling off the bones and the veggies are nice and soft they are perfect for a toddler to grab and munch on.
To minimise mess offer the chunky bits of the “soup” to be eaten by hand and spoon the liquid soup yourself.

excellent… and I love your photo’s….  what a gorgeous girl!!

keep sending those KooL KidZ tips, recipes and craft ideas in… along with your photo’s, names and ages of your kids.  We have a $100 Hamper to give away in October.  All you need to have done is submit a KoolKidZ entry between June 1st ans Oct 30th to be in the draw!

KooL KidZ craft ideas

Published by Elizabeth under Kids and Fashion, KooL KidZ

Dylan 3 yrs and Lucas 11 months.

Denise (mum) has some great ideas to keep the boys active and entertained.  here is just one.

quick money saver/craft idea….

Whilst loooking for some activities for my kids I came across
www.coloringbookfun.com which has heaps of free drawings for kids to colour in.  There are so many different characters to choose from.  I actually printed off about 10 drawings of Toy Story and made a book for my son.  He loved it.

As my eldest son loves Buzz Lightyear I themed his 3rd birthday as a ‘Buzz Lightyear’ party.  As a ’party favor’ I decided to print off a couple of drawings of Buzz and Woody and then made small colouring books for the kids…I also included two crayons for the kids to take home!

Something a bit better than lollies I think!

………………………………………………………………………

Thanks Denise… excellent ideas here… thaks.  Will definately be printing some off for when our daughter is next on holidays… or home sick from school!!
