This MEATLOAF

which satisfies all: Blend for Ruben, tomato sauce for Skye and veges for us:

1/4 cup of finely chopped capsicumIf YOU have a great tip, recession buster, saving money advice or a great recipe… send it in. 

2 stalks chopped celery

2 tbsp flax seeds

1 crushed garlic clove

1/2 teaspoon salt

pepper to taste

SIMPLY

Mix all ingredients in a large bowl, spread into a baking dish so about

2 inches high, spray with olive oil and place in pre-heated oven at 180 degrees.

Play for 45 minutes!!!

Healthy Breakfast Tip…

This recipe sounds weird, but I came up with it while making a carrot cake, and it works with my girls.

When I make porridge in the morning, I finely grate in the saucepan some carrot and/or zucchini, cook it a little, add the porridge ingredients and then cook as per the instructions.

At the last minute I throw in some frozen blueberries or raspberries.

Lilli and Sophie then get to sprinkle on some cinnamon sugar and swirl on some maple syrup and they love it.

On days I know they might not be eating so well (going out to a party or restaurant) I don’t worry to much about what they eat as they have already had a serve of vegi’s, fruit, dairy and grain. The cinnamon sugar and maple syrup they pop on is generally less than the sugar included in most kids cereals.

It’s that time of year again… and I love it. 

last year was …  soggy toast in bed with far too much butter and lavishing amounts of thick jam.   juice in a plastic cup and they all sit there at the end of the bed to watch me eat it….. (ick..!!)  and I do,  with a great smile on my face…

watching beaming eyes and happy smiles and fits of laughter as a gorgeous home made pencil case is presented to me made of cardboard, stickers, pipe cleaners and lots of glue! and a pipe cleaner necklace with a cut out pendant from an old card….  that’s made with so much pride and matter of accomplishment…. 

ahhh pure love of a child!!    

I take a photo of us together and  wear the necklace for the next week before popping it in a special box witha note and date… for when, in about 10 – 20 years will pull it out with my daughter and relive that moment all over again.   I love it all.  I love Mothers Day and am so very grateful that I am a mother …. being a mother is my greatest achievement… I am so blessed. There were many, many years I thought i would never be… I will be thinking of all 3 of my girls especially this day, even though 2 cannot be here to kiss and cuddle… I know they are watching from above and forever near.
