<p style="text-align: left;"> </p>
<div id="article_subheading">INGREDIENTS</div>
<p>Vanilla buttercake:<br />
90g butter, softened<br />
1/2 teaspoon vanilla extract<br />
1/2 cup (110g) caster sugar<br />
2 eggs<br />
1 cup (150g) self-raising flour<br />
2 tablespoons milk</p>
<p>Mascarpone cream:<br />
250g mascarpone cheese<br />
1/4 cup (40g) icing sugar<br />
1 tablespoon marsala<br />
3/4 cup (180ml) thickened cream, whipped</p>
<p>Coffee mixture:<br />
1 tablespoon instant coffee granules<br />
1/3 cup (80ml) boiling water<br />
2 tablespoons marsala</p>
<p>Decorations:<br />
50g dark eating chocolate, grated finely</p>
<div id="article_subheading">METHOD</div>
<p>1. Preheat oven to moderate (180°C/160°C fan-forced). Line 6-hole texas or 12-hole standard muffin pan with paper cases.</p>
<p>2. Beat butter, extract, sugar, eggs, flour and milk in small bowl with electric mixer on low speed until ingredients are just combined. Increase speed to medium, beat until mixture is changed to a paler colour. Divide mixture among cases; smooth surface.</p>
<p>3. Bake large cakes about 25 minutes, small cakes about 20 minutes. Turn cakes onto wire rack to cool.</p>
<p>4. Make mascarpone cream. Make coffee mixture.</p>
<p>5. Remove cases from cakes. Cut each cake horizontally into four. Brush both sides of cake slices with coffee mixture. Join cake slices with mascarpone cream.</p>
<p>6. Spread tops of cakes with mascarpone cream; sprinkle with grated chocolate. Refrigerate for 3 hours before serving.</p>
<p><strong>Mascarpone cream</strong><br />
Combine mascarpone, sifted icing sugar and marsala in small bowl; fold in cream.</p>
<p><strong>Coffee mixture</strong><br />
Combine coffee, the water and marsala in small bowl; cool.</p>

<p style="text-align: center;">Make a well in the centre and add lemonade and the cream</p>

<p style="text-align: center;">place on a grease proof paper on a baking tray fairly close together</p>

Fold in the chocolate chunks/chips.The dough is a bit looser than a standard cookie dough, don&#8217;t worry about it. Drop dollops of the dough, each about 2 teaspoons in size, an inch apart, onto a parchment (or Silpat) lined baking sheet. Bake for 12 &#8211; 14 minutes. </span></span></p>

½ cup (110g) firmly packed brown sugar<br />
½ cup (75g) plain flour<br />
½ cup (75g) self-raising flour<br />
¼ teaspoon bicarbonate of soda<br />
1 teaspoon ground ginger<br />
½ teaspoon ground cinnamon<br />
¼ teaspoon ground nutmeg<br />
90g butter, softened<br />
1 egg<br />
¼ cup (60ml) buttermilk<br />
2 tablespoons golden syrup<br />
50g dark eating chocolate, chopped coarsely</div>
<p><strong>Decorations</strong>:<br />
300ml thickened cream<br />
3 x 50g violet crumble bars, chopped coarsely</p>
<p><strong> METHOD</strong></p>
<p>1. Preheat oven to moderately slow (170°C/150°C fan-forced). Line 6-hole texas or 12-hole standard muffin pan with paper cases.</p>
<p>2. Sift dry ingredients into small bowl, add butter, egg, buttermilk and syrup; beat mixture with electric mixer on low speed until ingredients are combined. Increase speed to medium, beat until mixture is changed to a paler colour. Stir in chocolate. Divide mixture among cases; smooth surface.</p>
<p>3. Bake large cakes about 40 minutes, small cakes about 30 minutes. Turn cakes onto wire rack to cool.</p>
<p>4. Spread cakes with whipped cream; top with violet crumble.</p>

<h1>Choc Chip Bikkies</h1>
<p>100gm melted butter</p>
<p>1/4 cup sugar</p>
<p>1/2 tin condensed milk</p>
<p>1 1/4 cup flour</p>
<p>1 tsp baking powder</p>
<p>1 pkt chocolate chips</p>
<p>mix butter and sugar&#8230;.. add condensed milk and chocolate chips (if using melted butter choc chips will melt and turn the mix a great brony colour!) Put in baking powder and flour and combine well&#8230;&#8230;.. roll into small balls place on greased tray and press with fork &#8230;..bake in a 150 degree c for 8-10 minutes approx</p>
<p>I like to take them out while they are still doughy and scrape carefully onto a wire rack (this makes the bikkies soft and chewy!) I sometimes double the quantities in the mix and it makes about 50 little cookies that are perfect for school lunchboxes&#8230;.</p>

<p>1 large sheet of firm white cardboard<br />
375g packet white chocolate Melts, melted<br />
150-170 white chocolate Lindt Lindor balls, paper removed<br />
flowers to decorate  (or any decoration you choose)</p>
<p>  <strong>METHOD</strong></p>
<p>diameter on the cardboard and cut a large wedge out of the cardboard slightly less than 1/3 of the size of the circle. Make a cone from the cardboard. (The cone should be about 35cm high.)</p>
<p>Staple ends together and tape over the staples. The wider the wedge of cardboard the wider the finished cone will be. Cut a smaller wedge for a thinner cone.</p>
<p>Brush the cone all over with some of the melted chocolate. Secure to a board or serving plate with a little more chocolate. Dip each ball in a little of the chocolate and place around the base of the cardboard, ensuring a little of the chocolate is between each ball so they will stick together when dry.</p>
<p>Continue &#8216;glueing&#8217; the balls to the cone in layers until you reach the top. There will be some gaps in each layer so you will need to trim the sides of some balls to fit.</p>
<p>Decorate with flowers. If using fresh flowers, decorate close to serving.</p>

<div id="abstract">6 egg whites<br />
1½ cups (330g) caster sugar<br />
¼ cup (25g) cocoa powder, sifted<br />
1 teaspoon balsamic vinegar<br />
50g dark chocolate, chopped finely (Lindt)<br />
2 cups (500g) mascarpone<br />
¼ cup (60ml) milk, approximately<br />
240g fresh raspberries (or strawberries)<br />
dark chocolate, extra</div>
<div id="article_subheading"><strong>METHOD</strong></div>
<div id="body">Preheat the oven to 160°C/140°C fan-forced. Line a large oven tray with non-stick baking paper; mark a 22cm circle on paper. Grease and dust with cornflour, shake away excess.</div>
<p>Beat egg whites in a large bowl with an electric mixer until soft peaks form, gradually add sugar, beat until dissolved between additions.<br />
When sugar is dissolved, gently fold in sifted cocoa, vinegar and chopped chocolate.</p>
<p>Spoon mixture onto prepared tray inside circle, smooth the sides and top of pavlova.</p>
<p>Place pavlova in oven and immediately reduce the temperature to 120°C/100°C fan-forced. Bake for about 1¼ to 1½ hours or until dry to touch. Turn oven off and cool pavlova in the oven with the door ajar.</p>
<p>Just before serving, place pavlova onto serving plate. Place mascarpone in a bowl, gently whisk in enough milk to form a soft consistency. (Mascarpone varies in texture so add gradually and only if needed.) Spoon mascarpone mixture on top of pavlova and sprinkle with berries. Decorate with extra chocolate, if desired.<br />
Not suitable to freeze or microwave.</p>

<p>Now&#8230; she wants &#8220;this&#8221; or &#8220;that&#8221; and that scrunched up her nose now and again when she thinks I am not looking!    ahhhh Kids.  ( I hate to admit it&#8230;.   I was exactly the same)</p>
<p>She actually does like this recipe though&#8230;.  and its easy too.  I add extra corn to us adults after I have dished it up.  For some reason she really dislikes corn&#8230; and I just love it!!!</p>
<h1>Tuna spinach mornay pie with mash</h1>
<p>Serving size: Serves 4</p>
<p>Cooking time: Less than 60 minutes</p>

1 medium brown onion (150g), sliced thinly<br />
¼ cup (35g) plain flour<br />
2 cups (500ml) milk, warmed<br />
150g baby spinach leaves<br />
425g can tuna in springwater, drained<br />
2 tablespoons lemon juice</div>
<p><em>potato and celeriac mash</em><br />
400g potatoes, chopped coarsely<br />
300g celeriac, chopped coarsely<br />
2 tablespoons milk<br />
30g butter<br />
¼ cup (20g) finely grated parmesan cheese</p>

<p>Make potato and celeriac mash.</p>
<p>Melt butter in medium saucepan; cook onion, stirring, about 5 minutes or until softened. Add flour; cook, stirring, until mixture thickens and bubbles. Gradually add milk; stir until mixture boils and thickens. Remove from heat; stir in spinach, tuna and juice.</p>
<p>Preheat grill.</p>
<p>Spoon tuna mixture into shallow flameproof 1.5-litre (6-cup) dish; top with mash. Grill until browned lightly.</p>
<p><em>Potato and celeriac mash</em></p>
<p>Boil, steam or microwave potato and celeriac, separately, until tender; drain.</p>
<p>Combine potato and celeriac in large bowl; mash with milk and butter until smooth. Stir in cheese; cover to keep warm.</p>

Once the chicken is falling off the bones and the veggies are nice and soft they are perfect for a toddler to grab and munch on.<br />
To minimise mess offer the chunky bits of the &#8220;soup&#8221; to be eaten by hand and spoon the liquid soup yourself.</p>

We attempted to combine 2 cake recipes and then make muffins out of them instead. I *think* it worked (as I eat my 4th for the day).  (By Rebecca)</span></p>
<p><span style="color: #333399;">Zucchini and Carrot Muffins<br />
(makes about 24)</span></p>
<p><span style="color: #333399;">2 eggs<br />
1 1/2 cups caster sugar<br />
2/3 cup olive oil<br />
1 tsp vanilla extract<br />
1 1/2 cup self-raising flour<br />
1 tsp baking powder<br />
2 tsp cinnamon<br />
2 cups grated grated zucchini (lightly packed)<br />
1 cup grated carrot (lightly packed)<br />
2 cups crushed pineapple<br />
1/2 cup almond meal<br />
Icing sugar for dusting</span></p>
<p><span style="color: #333399;">Preheat oven to 180°C.<br />
Combine eggs, sugar, oil and vanilla.<br />
Sift in flour, baking powder and cinnamon.<br />
Fold in zucchini, carrot, pineapple and almond meal.<br />
Grease 2 large muffin trays and spoon in mixture, about 2/3 full.<br />
Bake for around 15 minutes, checking regularly. Muffins are cooked when loely and brown.<br />
Allow to cool slightly, then place on a wire rack to cool completely.<br />
Dust with icing sugar.<br />
These muffins keep well for 4-5 days in an airtight container.</span></p>
