Kids in the kitchen…. White chocolate truffle cake for Christmas

Yep… this is a great project the kids can help with in the kitchen ready for Christmas!  I can almost hear their sqeals of delight and see the look of satisfaction on their faces!   Doesnt this look FANTASTIC!!

so… after you have gone shopping online at La Toriana for all your baby clothing, designer kids outfits and baby gifts for Christmas, print out this recipe and start maing your own wonderful truffle cake for when guests arrive. 

They will be so impressed.  Its something the kids and you can do together… make sure you take a photo too…. and soon you will well known in your circle of family and friends for wonderful recipes!!

 

I cannot take the credit for making this, though my 7 yr old and I made one and was so easy!  here is the place to get gorgeous recipes like this from.

Try this cheats version of a Croquembouche
INGREDIENTS

1 large sheet of firm white cardboard
375g packet white chocolate Melts, melted
150-170 white chocolate Lindt Lindor balls, paper removed
flowers to decorate  (or any decoration you choose)

  METHOD

diameter on the cardboard and cut a large wedge out of the cardboard slightly less than 1/3 of the size of the circle. Make a cone from the cardboard. (The cone should be about 35cm high.)

Staple ends together and tape over the staples. The wider the wedge of cardboard the wider the finished cone will be. Cut a smaller wedge for a thinner cone.

Brush the cone all over with some of the melted chocolate. Secure to a board or serving plate with a little more chocolate. Dip each ball in a little of the chocolate and place around the base of the cardboard, ensuring a little of the chocolate is between each ball so they will stick together when dry.

Continue ‘glueing’ the balls to the cone in layers until you reach the top. There will be some gaps in each layer so you will need to trim the sides of some balls to fit.

Decorate with flowers. If using fresh flowers, decorate close to serving.

Chocolate Raspberry Party Pavalova… YUM

Ever looking for an easy, but impressive looking “something” to take to parties at this time of year?  Well you cannot go past this recipe for the “wow” factor on looks and on taste!

Best of all… adults and kids alike love this!  think might make this for tiana’s next birthday cake!

INGREDIENTS
6 egg whites
1½ cups (330g) caster sugar
¼ cup (25g) cocoa powder, sifted
1 teaspoon balsamic vinegar
50g dark chocolate, chopped finely (Lindt)
2 cups (500g) mascarpone
¼ cup (60ml) milk, approximately
240g fresh raspberries (or strawberries)
dark chocolate, extra
METHOD
Preheat the oven to 160°C/140°C fan-forced. Line a large oven tray with non-stick baking paper; mark a 22cm circle on paper. Grease and dust with cornflour, shake away excess.

Beat egg whites in a large bowl with an electric mixer until soft peaks form, gradually add sugar, beat until dissolved between additions.
When sugar is dissolved, gently fold in sifted cocoa, vinegar and chopped chocolate.

Spoon mixture onto prepared tray inside circle, smooth the sides and top of pavlova.

Place pavlova in oven and immediately reduce the temperature to 120°C/100°C fan-forced. Bake for about 1¼ to 1½ hours or until dry to touch. Turn oven off and cool pavlova in the oven with the door ajar.

Just before serving, place pavlova onto serving plate. Place mascarpone in a bowl, gently whisk in enough milk to form a soft consistency. (Mascarpone varies in texture so add gradually and only if needed.) Spoon mascarpone mixture on top of pavlova and sprinkle with berries. Decorate with extra chocolate, if desired.
Not suitable to freeze or microwave.

Mum…. Whats for Dinner?

I dont know about you… but Tiana now 7 keeps wanting to know   “mum… whats for dinner?”   Before now it never really worried her… she just ate  whatever was given. 

Now… she wants “this” or “that” and that scrunched up her nose now and again when she thinks I am not looking!    ahhhh Kids.  ( I hate to admit it….   I was exactly the same)

She actually does like this recipe though….  and its easy too.  I add extra corn to us adults after I have dished it up.  For some reason she really dislikes corn… and I just love it!!!

Tuna spinach mornay pie with mash

Serving size: Serves 4

Cooking time: Less than 60 minutes

INGREDIENTS
50g butter
1 medium brown onion (150g), sliced thinly
¼ cup (35g) plain flour
2 cups (500ml) milk, warmed
150g baby spinach leaves
425g can tuna in springwater, drained
2 tablespoons lemon juice

potato and celeriac mash
400g potatoes, chopped coarsely
300g celeriac, chopped coarsely
2 tablespoons milk
30g butter
¼ cup (20g) finely grated parmesan cheese

 

 

METHOD

Make potato and celeriac mash.

Melt butter in medium saucepan; cook onion, stirring, about 5 minutes or until softened. Add flour; cook, stirring, until mixture thickens and bubbles. Gradually add milk; stir until mixture boils and thickens. Remove from heat; stir in spinach, tuna and juice.

Preheat grill.

Spoon tuna mixture into shallow flameproof 1.5-litre (6-cup) dish; top with mash. Grill until browned lightly.

Potato and celeriac mash

Boil, steam or microwave potato and celeriac, separately, until tender; drain.

Combine potato and celeriac in large bowl; mash with milk and butter until smooth. Stir in cheese; cover to keep warm.

well the best way to get the most nutrients into my Amelia is my mum’s special soup.
Basically you buy THE BEST chicken drumsticks you can get, (organic ones - the better the drumstick the better the soup)
Slowly bring the drumsticks to boil in some water in a pot.
Add a pinch of salt
As the soup boils along add some chopped up veggies
potato
sweet potato (essential)
celery (essential)
tomato
carrot
zucchini
broccoli… anything else you like
let these come to a slow boil
The soup will absorb all the goodies from the drumsticks and the veggies
The final addition is some noodles.
Once the chicken is falling off the bones and the veggies are nice and soft they are perfect for a toddler to grab and munch on.
To minimise mess offer the chunky bits of the “soup” to be eaten by hand and spoon the liquid soup yourself.

Zucchini cake + carrot cake = zucchini and carrot muffins

A day in the kitchen today to keep the troops occupied while its raining outside. I am not complaining!
We attempted to combine 2 cake recipes and then make muffins out of them instead. I *think* it worked (as I eat my 4th for the day).  (By Rebecca)

Zucchini and Carrot Muffins
(makes about 24)

2 eggs
1 1/2 cups caster sugar
2/3 cup olive oil
1 tsp vanilla extract
1 1/2 cup self-raising flour
1 tsp baking powder
2 tsp cinnamon
2 cups grated grated zucchini (lightly packed)
1 cup grated carrot (lightly packed)
2 cups crushed pineapple
1/2 cup almond meal
Icing sugar for dusting

Preheat oven to 180°C.
Combine eggs, sugar, oil and vanilla.
Sift in flour, baking powder and cinnamon.
Fold in zucchini, carrot, pineapple and almond meal.
Grease 2 large muffin trays and spoon in mixture, about 2/3 full.
Bake for around 15 minutes, checking regularly. Muffins are cooked when loely and brown.
Allow to cool slightly, then place on a wire rack to cool completely.
Dust with icing sugar.
These muffins keep well for 4-5 days in an airtight container.

What a great indoor WINTER project to do with the kids.  Kids love “creating” and I have found that having them hands on in making healthy foods really gets them inspired to eat new foods.  Thanks Rebecca for sharing this recipe with us.  Looks like its great fun from your pics….
